I hope you all had a great Christmas time and are now ready for the new year 2019. May it be a very happy one for all of you – maybe with many new DIY projects, a lot of cooking and baking ;).
After a very happy Christmas time with family in Germany we’re now back home, excited for what 2019 will bring. Many things are planned…holidays, small projects and much more.
Obviously I had to end 2018 with a cake so I used the last day of the year to make a NYE cake. I used cookie cutters as chocolate moulds (as seen on this lovely Instagram account). I made a simple sponge cake, filled it with whipped double cream, tinned apricots, a bit of vanilla sugar and cinnamon. The double cream gets so stiff when whipping it that no gelatine was needed.
The recipe for the sponge cake is the same that I used here. To make it a bit more wintery I used cinnamon instead of vanilla extract.
Once the cake was layered I used whatever I found in my cupboard to make it look ready for NYE: Marshmallows, chocolate etc…
