Summer salad á la Annika

Back when I was still a student a few years ago I went round to my friend Annika’s house for dinner one summer evening. She prepared a summer salad with fresh peaches and fried sliced beef – all I can say is it was soooo good and still now it is my favorite salad for summer!
I never had a recipe for it and I tend to forget the ingredients every year – so every year during the first warmer days in spring my friend receives a message that reads roughly like this: “Hey, what are the ingredients for my favorite summer salad again?” – although she was even the one that reminded me this year by sending me pictures of the first summer salad for 2016 – to me this means summer has officially started 🙂
So, to not forget the ingredients again (although it is kind of a tradition now :)) I decided to finally write them down, here on the blog.


Annika uses peaches, a mix of rocket and lambs lettuce, fried beef slices and a lemon dressing for her salad. I have added a bit of goats cheese to the mixture.

For two portions I roughly use:

– 4 peaches
– two hands full of lambs lettuce
– two hands full of rocket
– around 200g beef steak
– 1 pack of goats cream cheese
– juice of one lemon

I arrange the lettuce and the rocket on the plate, slice the goats cheese, the steak and the peaches in small strips/chunks.
First of all I let the peaches caramelise in a frying pan with a bit of honey and do the same with the slices of goats cheese. You’ve got to be a bit careful as the goats cheese slices tend to crumble a bit.
Finally I fry the beef stripes in a bit of oil until they are medium rare and make a quick dressing out of the lemon juice, oil, a bit of sugar and mustard until it has a taste that I like.

As you can see it is not even a proper recipe, it is more about all the different flavors and textures that come together. Annika makes her salad different than I make it and it will just taste as delicious. I think with this salad it is about how well the flavors work together and I love it.

    I make a very similar salad, but meatless. I wouldn’t have thought to add the beef; have to try this now! Gorgeous pictures!!!
