I am not very inventive when it comes to evening meals that I have to prepare after work. Also sometimes I am not hungry in the evening, so often I just don’t eat at night.
If I’m hungry though I found a dish with tuna (or salmon) that is really quickly prepared, healthy and tastes very good. Other than that you don’t need many ingredients and you can easily improvise if you don’t have all the ingredients in the house, which is always a bonus.
For one portion I use the following ingredients:
– 1 tuna steak (if possible I use steaks from sustainable fishery. I try not to eat Tuna too much and often replace it with salmon)
– half a mango, sliced
– a handful of cherry tomatoes, chopped in half
– half a bunch of coriander, chopped
– a few pine nuts
– 1 spring onion, diced
– half a avocado, sliced
– olive oil
– juice of one lime
Put the veggies on a plate. Season the tuna and grill it on both sides. Whilst grilling the tuna prepare a dressing out of olive oil and the lime juice, season with salt and pepper. Place the tuna on the plate, drizzle with the dressing and sprinkle the nuts and the coriander on top.
